Chicken & Kale

Here's a quick way to make kale unhealthy: pan fry it in bacon fat from a previous day's breakfast.

Good Starts

There was a huge bacon purchase last week. I've been working hard at the stash. Weekday mornings have been an egg and bacon. Woof!

Lunch today was kept simple. Baked salmon with lemon juice and pan fried kale with garlic and basil. Leftover yam fries to make me extra happy.

Kale Fail

I tried making kale chips and burned them. The sad back up was boiling lettuce. I did get a my kale fix through the dip I made. Dairy free cream cheese, kale, lemon juice, and garlic. All in to my food processor they go. Veggies and dip at work for a week.

The next day, I reduced my chances for messing up kale again by doing the simple steam with my salmon. I scarfed that meal down in under 5 minutes.



Me Love Chips

Chips are my weakness.
Terra chips are my favourite these days.

I've been working away at a pot of soup for lunch every day this week. These chips steer me away from boredom.

Taking it Easy

And now I penny pinch again.
As much as I want to eat better and make better choices at the market, my wallet just cannot afford it for every meal.

At the least, I'll eat organic for the dirty dozen.

Nothing says money saver like a big pot of soup.

Bell peppers, onion, celery, cilantro, cabbage, chicken, carrots, oregano, star anise, cinnamon, pepper and chicken broth.
