Never Ending Turkey

It's been almost two weeks since Christmas and turkey leftovers are still finding their way in to my meals. I'm still loving it too. I'd keep adding it to my meals, but it seems after Thanksgiving and Christmas, people don't often make whole turkeys for dinner just on a regular Tuesday. I guess I could roast a turkey myself, but... I just got tired thinking about it.

Tonight was turkey and an overeasy egg on spinach, alfalfa sprouts, cucumber and avocado. Honey mustard dressing.
